A unique place to raise excellent oysters
The Sacca degli Scardovari is one of the most recognisable and characteristic landscapes of the Po Delta. An area of transition between the freshwater and marine habitats, where the sea is protected by thin strips of land and sandy banks, fishermen have drawn the best they could find from the large basin since 1936. The name of the Sacca derives from the "scardova", a fish that was very abundant in the area towards the end of the eighteenth century, but this is certainly a seafood paradise. This is where the lady of the Po Delta is reproduced: the pink oyster "The Delta Pearl", farmed with an innovative system which simulates, thanks to a technology implemented with solar panels, the Atlantic tides of the North European seas. La Sacca extending for almost 3,200 hectars, with an average depth of about one and a half metres, it was formed as a result of the continuous remodelling of the coastline due to the evolution of the great river's Delta. This is where oysters literally move on the surface of the water thanks to a complex mechanism that uses clean energy (wind and solar photovoltaic) and manually operated remotely to simulate the trend of the tides, i.e. raising and lowering of the water surface.
The method used is "suspended": the oysters are attached vertically to ropes which allow for precise dosing of water and air, alternating periods of immersion with periods of exposure to the air and the sun, simulating the alternation of the tides. The less salty water of the lagoon gives the oysters a particular, delicate and aromatic flavour.
