This is how Florie Tarbouriech describes the Seven project, our seventh creation. After spending weeks rocking and rolling in the waves, the Seven arrives on your tables with a firm and crunchy flesh, with a smooth and inimitable mother-of-pearl. It is the result of the same innovative method, the Solar Tide, our Seven is a young oyster No. 4, packaged in a wooden gift box for 7 oysters, with a knife and a screen-printed towel.

Riserva

The Delta Reserve is the younger sister of the Delta Pearl. It is individually glued by hand and completes all its growth on the rope in the Sacca degli Scardovari. Its growth is harmonious and reflects the territory in which it lives. At the end of the cycle it will be detached from the ropes and will be immediately ready for our tables. Its shell is irregular on the edges but thick and really pearly. In the mouth it will be slightly iodised and with an average abundant fleshiness.
It has a vegetable aftertaste with accentuated hints of nuts.

Esperia

Esperia is an oyster that is raised in the Italian seas and is refined for two months in the Sacca degli Scardovari in the Po Delta. The refinement, which takes place in Australian baskets, takes advantage of the constant surfacing work offered by the Tarbouriech plants.
In these two months the oyster reaches a shell thickness and an abundance of fruit characteristic of the Sacca. On the palate it will be crunchy and sweet, with an aftertaste of vegetables and nuts with notes of undergrowth.
